quorn with vegetables

You can make this with store cupboard and freezer staples, as well as fresh produce, so adaptable for all seasons. Good for a quick, cheap, healthy family meal.

Ingredients (for 2 people)

half packet of Quorn pieces
1 onion
half carton of pasata, or half tin of chopped tomatoes
selection of frozen vegetables or: one carrot, half a head of broccoli, half a small tin of sweetcorn, handful mushrooms etc. according to taste
about one tablespoon olive oil
one teapoon dried herbs
salt and pepper

A large frying pan or wok would be handy.

Wash and chop the fresh vegetables into bite-sized pieces.
Fry the onion (and mushrooms, if using,) in the olive oil for a few minutes to soften.
 Add Quorn pieces and fry until they start to turn golden brown, stirring occasionally.
Add tomatoes/pasata and the herbs along with the fresh vegetables. If using frozen ones, add 5 minutes later. Cover and cook gently for 15 minutes, stirring occasionally to avoid sticking.
Add salt and pepper to taste. Check all vegetables are cooked through, allowing more time if not.

Serve with brown rice, pasta, couscous or steamed potatoes.
