quorn with vegetables

You can make this with store cupboard and freezer staples, as well as fresh produce, so adaptable for all seasons. Good for a quick, cheap, healthy family meal.

Ingredients (for 2 people)

half packet of Quorn pieces
1 onion
half carton of pasata, or half tin of chopped tomatoes
selection of frozen vegetables or: one carrot, half a head of broccoli, half a small tin of sweetcorn, handful mushrooms etc. according to taste
about one tablespoon olive oil
one teapoon dried herbs
salt and pepper

A large frying pan or wok would be handy.

Wash and chop the fresh vegetables into bite-sized pieces.
Fry the onion (and mushrooms, if using,) in the olive oil for a few minutes to soften.
 Add Quorn pieces and fry until they start to turn golden brown, stirring occasionally.
Add tomatoes/pasata and the herbs along with the fresh vegetables. If using frozen ones, add 5 minutes later. Cover and cook gently for 15 minutes, stirring occasionally to avoid sticking.
Add salt and pepper to taste. Check all vegetables are cooked through, allowing more time if not.

Serve with brown rice, pasta, couscous or steamed potatoes.

Cheese straws

Made cheese straws for Christmas Eve. Dead easy, these: don't bother with shop ones. If you know how to make pastry, it's basically that, plus some flavourings, and rolled out thin. If not...

To make enough for a small gathering (about 20 cheese straws, depending on how thinly you roll the dough):

4 oz/100g flour (including some wholemeal is good, but white flour is easier to use)
2oz/50g butter
a few tablespoons milk or water
about a handful of grated hard cheese, any sort
sprinkling of paprika, cayenne, salt, pepper, mixed herbs etc.
half teaspoon mustard powder (optional)

Rub the butter into the flour between finger tips until it looks like breadcrumbs.
Add dry ingredients including cheese; mix up, then gradually stir in just enough water/milk to be able to gather it together with a knife to form a dough.
Roll out thinly on a floured surface, then cut into narrow strips with a knife. Cut to desired length (longer ones are more fragile) and place on a greased baking tray, twisting each strip once.
Bake in a fairly hot oven (gas 6) until they turn golden brown.
Leave on tray to cool slightly before turning out onto a wire rack to cool completely.

Great with dips, salsa or just on their own.
